One of the things I thought I would miss most when transitioning to a plant-based diet was…
I thought there was no way anything could be as good as the original cheesy, doughy, greasy flavor bombs I was used to as an omnivore.
I WAS WRONG.
In fact, I’ve come to love vegan pizza even more than the alternative.
Going out for pizza at Rudy’s, Virtuous Pie, Bellagio’s or MOD Pizza here in Portland has become one of my favorite ways to spend a night out.
BUT….that can get pretty spendy.
So, I figured it was time to figure out how to make my own at home.
(I’d been avoiding doing so because working with yeast used to freak me out, but I’ve since come to realize that it’s no big deal.)
Below is the recipe I’ve been using to satisfy my taste-buds-and my wallet-when I get the hankering for pizza.
2 1/4 teaspoons active dry yeast (1 packet)
1 Cup Warm water
1 tsp. sugar
1 tsp. salt
2 cups flour
1 Tbs. olive oil
Vegan Cheese* (I recommend SO Delicious Brand’s Mozzarella or Follow Your Heart)
Whatever toppings your heart desires!
*I’ve also tried omitting the cheese altogether and it was still wonderful :)
In a medium bowl, combine yeast & sugar
Add the WARM water (about 100 degrees)
Let sit until the yeast begins to froth
Once the yeast froths, add salt & flour
Mix until dough forms
Knead the dough for 1 minute inside the bowl & then form into a ball
Add oil to the bowl & roll your dough in the oil until it’s fully coated
Put your bowl with the dough in it into the oven (turned off) & let rise for 15 minutes (should double in size)
Once your dough has risen, punch it into another ball to incorporate the oil
Preheat oven to 450 degrees
Roll your pizza dough out onto a lightly floured surface (For thin crust, divide the dough into two balls. For normal crust, use the entire ball of dough)
Place dough onto an oiled pizza pan
Poke holes into the dough with a fork & brush the whole thing with a little oil
Add sauce (I recommend using tomato paste because it’s less watery)
Add vegan cheese & whatever other toppings you like
Bake in the oven for 15-25 minutes, or until crust is golden brown
Let cool, remove from pan, slice & enjoy!
