These cookies are so good, you won’t be able to keep your paws off of them!
I’m not as huge pumpkin spice fanatic as some, but I do like a little bit to welcome the season of leaves & cuddles.
Several years ago when I was on a leadership retreat, someone I was sharing a room with brought these AHHHHMAZING homemade pumpkin & chocolate chip cookies.
I swear I could have ate 100 of them.
I had long forgotten about those little balls of heaven until just a couple days ago when the memory resurfaced & I found myself drooling over the thought of them.
I searched and searched and search for a recipe that looked like it was siilar to the one used my the Saint who had made them before, and I found NUTHIN’.
So, I took it as a sign from the Universe that it was time I create my own Pumpkin Heaven Cookies.
I went to work and HALLELUJAH they turned out delicious on the first try!
That never happens!
Totally a sign it was meant to be.

2 cups Flour
2/3 cup canned Pumpkin Puree
1/2 cup Brown sugar
1/2 cup White sugar
1/2 cup Coconut Oil
4 tsp Lemon Juice
1 1/2 tsp Pumpkin Pie Spice
1 tsp Baking Soda
1/2 tsp Salt
1/2 cup Chocolate chips (optional, but totally recommended)
Preheat oven to 350 degrees
In a large mixing bowl combine sugars & coconut oil
Add lemon juice, baking soda, pumpkin pie spice & salt
Fold in the flour
Add the chocolate chips
Roll into balls and place evenly on a lined cookie sheet
Bake for 10-15 minutes
Let cool & enjoy!
