There’s something about a nice, hearty soup that just screams comfort food when the temperature drops.
While this soup is hearty, comforting and tasty beyond belief…it’s also SOUPer healthy.

I actually created this recipe in response to a request from Scott Sanders, Author and Creator of cancerwell.org , to come up with a cancer-friendly recipe that he could publish on his site.
Sweet potato, red lentils, quinoa, turmeric and ginger are all nutritional powerhouses, so when you throw them all together you know you’re in for an ultimate health boost.
I hope this soup warms you up as much as you being here warms my heart! (Yeah I know, I’m a cheeseball…but it’s true!)

1 Large Sweet Potato, approximately 2 1/2 Cups chopped
1 Clove Garlic (finely chopped)
3 1/2 Cups Water
1 Cup Plant Milk (I used cashew)
1 Vegetable Bouillon Cube (or replace 2 Cups of Water with 2 Cups Vegetable Broth)
1/2 Cup Red Lentils
1/2 Cup Quinoa
1 Tbsp Coconut Aminos
1/2 Tsp Turmeric
1/2 Tsp Ginger Paste (or 1 tsp freshly grated)
Peel & chop your sweet potato and garlic
Toss into a large pot over medium heat and stir continuously until the garlic begins to appear translucent
Pour in the water (& vegetable broth if you’re not using bouillon)
Add the bouillon cube & bring to a boil
Boil until the sweet potato chunks are fork tender
With a slotted spoon, remove the sweet potato chunks and put into a blender
Add the plant milk, turmeric, ginger & coconut aminos to the blender with the sweet potato
Let cool for a few minutes
Add the lentils and quinoa to the pot on the stove, letting them simmer
Blend the ingredients in the blender until totally smooth
Pour the sweet potato mixture into the pot on the stove & stir until incorporated
Turn heat down to low/med-low & cover with a lid
Let cook for 30-35 minutes, or until quinoa & lentils are fully cooked
Serve hot, warm or cold (it sounds weird, but it’s actually really good) & enjoy!
*I topped mine with ground sage and it was AMAZING! :)
