Quick and Easy Vegan Tofu Scramble

Preparation:

1. Prepare all ingredients (slice, dice, chop, rinse, drain, etc)

2. Add about 3 Tbsp of water to a skillet over medium heat

2. Once the water begins to simmer, add crumbled tofu and spices into the pan 

3. Push tofu around until all of it is covered in spice

4. Add all remaining ingredients EXCEPT spinach (and excluding the ones you prefer raw)

5. Cook until nearly all the moisture had evaporated

6. Lower heat, add spinach and continue cooking until the spinach has wilted

7. Remove from heat and any additional toppings

8.  Enjoy alone or on top of toast, chips or tortillas





Tofu Scramble is a quick, easy and delicious dish for any time of the day! It's loaded with protein, greens and lots of veggies, so it's great as a savory breakfast or a post-workout meal. Enjoy it alone, in a burrito or with toast, tortillas or chips!

Ingredients: 

½ block Firm Tofu (crumbled with hands or a fork)

½ cup Black Beans, rinsed and drained

1 medium Tomato, diced

 ½ cup Mushrooms

 ¼  cup Frozen corn

¼ cup Sweet peppers

½ Avocado

2 Cups Spinach

Green onion, chopped

Cilantro, chopped                                    

Spices:

 1/4 tsp Chili powder

 1/4 tsp Paprika

1/4 tsp Cumin

1/4 tsp Garlic/Onion powder

1 Tbsp Nutritional Yeast

Salt and Pepper

Optional:

Hot sauce and/or Salsa

Vegan Cheese
