Vegan Apple Strudels

Remember when you were a kid and every once in a while the beloved day would come where your parents would let you pick out a treat at the bakery?

It was like Christmas and your birthday all in one, right?

I personally always made a bee-line for the glazed or cinnamon-twists.

Unfortunately, most bakeries do not make these delicacies with vegans in mind (but more & more are starting to!).

While this may be a good thing for your waistline, it’s a bit of a bummer when you’re craving a sweet treat.

That’s why I decided to create a cruelty-free and vegan-friendly version of one of my other favorite treats: the apple strudel

& let me tell you… it did NOT disappoint!

But don’t just sit there and take my word for it…

*Makes 2 Strudels

What You’ll Need:

  • 2 sheets puff pastry dough found in the freezer aisle (check ingredients to make sure it’s vegan)

  • 2 1/2 Cups thinly sliced Apples

  • 2 Tbsp Sugar (I used coconut sugar)

  • 1 Tbsp Coconut Oil or Vegan Butter

  • 2 tsp Lemon juice

  • 1 tsp Cinnamon

  • 1/2 tsp Allspice

  • 1/2 tsp Nutmeg


What To Do:

  1. Follow directions on the box for thawing the puff pastry dough

  2. Meanwhile, place your thinly sliced apples in a microwave- safe mixing bowl with the sugar, lemon juice, cinnamon, allspice & nutmeg

  3. Use a rubber spatula to mix until all the apples are coated

  4. Add the oil or vegan butter to the bowl

  5. Microwave for two minutes

  6. Mix with spatula again until all the apples are coated

  7. Once your puff pastry dough has thawed, preheat oven to 400° F

  8. Lay your dough out on a lightly floured surface

  9. Place some of your apple filling in a vertical strip down the middle of your pastry sheet- leaving plenty of room on the sides, and a little room at the top & bottom

  10. On either side of your filling, create downward-slanting strips of dough

  11. Once your strips are cut, alternate folding one over from each side to cover the filling in the middle- creating a “braided” look

  12. Fold the little bits of dough at the top & bottom over to seal the ends of your strudel

  13. Place in the oven on a baking sheet for 15-20 minutes, or until golden brown

  14. Remove from heat & let cool

  15. Enjoy plain or top with icing, nuts, vegan ice cream…or whatever else your heart desires!
